This fresh seasonal salad is ridiculously easy to put together and quite versatile.

Ingredients
  • Ingredients -
1/2 bowl cooked chickpeas, rinsed and drained
  • 50 gms of paneer cubes
  • ½ onion chopped
  • ½ cucumber chopped
  • 1 to mato chopped
  • 2 Tbsp. chopped parsley
  • 2 cloves garlic chopped
  • 3 Tbsp. lemon juice
  • 2 tsp. extra-virgin olive oil
  • Red chilli powder salt to taste
Instructions
  1. Combine all ingredients in a large bowl. Toss to mix. Allow to stand at room temperature for 10 minutes for flavours to blend.
